There are many varieties of basil, the type used commonly as a flavor is typically called sweet basil (or Genovese basil), as opposed to Thai basil,lemon basil and holy basil.

In general, it is added at the last moment, as cooking quickly destroys the flavor. The dried herb also loses most of its flavor.

Basil pairs exquisitely with lemon, tomato and garlic. Sweet basil is an essential ingredient in Italian and Mediterranean cuisine and loves being added to pasta, pizza, creamy sauces, dressings, soups, salads and olive oil. Arugula is best described to have a "peppery" and slightly spicy taste. Basically, what black pepper smells like, arugula tastes like. When using arugula as a base for a salad, we recommend keeping the salad simple. Arugula has such a strong flavor, that you do not want to have too much going on. We like to pair it with cherry tomatoes, the slightest bit of onion, and shaved parmesan. Arugula is fantastic and can totally stand alone in a salad, but it is also great on when lightly tossed with pasta before serving.
